Tom kha gai, literally translates to boiled galangal chicken. It is a spicy hot soup in Thai Cuisine made with coconut milk, lemon grass and chicken. The fried chillies add a smoky flavor as well as texture, color and heat, but not so much that it overwhelms the soup. The key is to get a taste balance between the spices.
Ingredients
- Coconut Milk, Canned, 400 ml
- Juice, Lime, Fresh, 40 ml
- Coriander, Leaves, Fresh, 50 g
- Sauce, Thai Fish, Amoy, 10 g
- Stock Cube, Chicken, Knorr, 1 Cube
- Chicken, Breast, Fillets, Organic, Average, 200 g
- Mushrooms, Button, Average, 150 g
- Peppers, Hot Chilli, Red, Raw, 25 g
- Galangal, 50 g
- kaffir lime leaves, 10 Leaf/ves
Instructions
Slice meat Slice Galanga Cut chilis diagonally in fine pieces Tear lemon leaves in two pieces Heat up ½ cup of water (do not boil!) Add ½ cup of coconut cream (that is the concentrated part from the top of the can) Bring to boil, then add galanga and bouillon Add meat and fish sauce Add the rest of the coconut milk and the mushrooms Boil up briefly, then add lemon leaves, chili, coriander and the juice of the lime - FINISHED!
