The cauliflower is an underestimated vegetable . Using it in this salad will hopefully brighten up its image.
Ingredients
- Beans, Green, Fine, Average, 300 g
- Thyme, Fresh, 15 g
- Prawns, King, Raw, Average, 400 g
- Cauliflower, Raw, 400 g
- Lettuce, Green Leaf, Raw, 100 g
- Onions, Spring Or Scallions, Raw, 40 g
- Olive Oil, Extra Virgin, 3 Tbsp
Instructions
Divide the cauliflower into small florets and steam or blanch them so they don’t lose their crunchiness. Drain and refresh. Blanch the beans and refresh them with cold water. Drain. Roughly chop the lettuce. Poach the prawns or shrimps and drain them. Put them in a serving bowl together with the lettuce, green beans and the cauliflower florets. Toss well. Sprinkle the thyme leaves and spring onion over the salad. Season the Extra Virgin olive oil with a little salt and pour over the salad. Serve immediately.
